Instructions
- Add the chicken pieces to a mixing bowl.
- Season the chicken with ginger garlic paste, turmeric powder, coriander powder, red chili powder, and salt.
- Mix well until the chicken is evenly coated, then let it marinate for 30 minutes.
- In a pot, cook the basmati rice with water, oil, salt, and fresh mint leaves until the rice is done.
- Drain the rice if needed and set it aside.
- For the masala base, melt the unsalted butter in a pot over medium heat.
- Add the cumin seeds and let them become fragrant.
- Add the onion and cook until softened.
- Stir in the tomatoes and ginger garlic paste.
- Cook until the tomatoes break down and the mixture becomes soft and saucy.
- Add the marinated chicken to the masala base.
- Cook until the chicken is fully cooked through.
- Stir in the yogurt, kasuri methi, and garam masala powder.
- Add a little water if needed to loosen the masala.
- Layer the cooked basmati rice over the chicken masala.
- Cover and let it simmer for a few minutes so the flavors blend together.
- Garnish with fresh mint leaves and/or cilantro.
- Top with crispy fried onions before serving.

- Adjust the red chili powder depending on how spicy you want the biryani.
